SO WHAT Wednesday

I am linking up with Shannon today for So What Wednesday.


So what... if I waited until almost 9 PM to do my So What Wednesday post... it has been a busy day.

So what... if this morning after eating this Cinnabon cinnamon roll cake for breakfast two days in a row I threw the rest in the trash so I would stop eating it for breakfast.  It is THAT good. 

So what... if my husband needs to go to the DMV tomorrow... and they only take cash and check.  We never have cash.  I used my last check today.  Since I rarely use them, I didn't realize I was quite out.  And... well we may have some more, but our guest bedroom/office/storage room (where they probably are) looks like a bomb went off inside of it. I just ordered a new box.

So what... if I have stopped complaining when my husband plays stupid video games.  Madison likes to watch him and it gives me free time to buy random stuff on the Internet or watch trash reality TV in my bedroom.

Blog Roundup

I read most of the blogs I follow from my phone through my AppGReader app.  When I read something I am interested in going back to or commenting on, I star it, which leaves me with a HUGE folder of starred items.   Here are some share worthy reads I have come across lately....
This post about weekly food prep by Iron Bowled Over has some handy tips for preparing meals in advance for ease during the week.  I will definitely be following some of her tips.

This post that shared a recipe for a Cinnabon Cinnamon Roll Cake by Six Sisters Stuff.  I made this on Friday.  I subbed a yellow cake mix for the homemade cake and omitted the nuts.  It was a big hit with everyone and is excellent.

Thursday Randoms...

I haven't blogged all week...mainly because all of my time spent on the computer has been work related since I upped my hours for the next few weeks until we get more people hired.  So in no particular order here are some things that have been going on...

{1} You may remember a little bit over a year ago when I shared my friend Kelly was murdered by her husband, in her home, in front of her 9 year old daughter.  This week was his trial.  He was convicted of first degree murder and use of a firearm in the commission of a felony and will be sentenced in April.  This verdict will not bring my friend back, but I am glad he was convicted and will be serving jail time. 

{2} Madison got braces this weekend.  Buh-bye.... credit card with a 0 balance... hello beautiful teeth.  Everything went smoothly.  She seems okay.  I think she is glad to be off of school today and just hanging out.

{3} Last year I made Kelle Hampton's pork carnitas and they were amazing.  {I am going to talk about things other than the carnitas... but you make it in the crock pot and they are great}.  I knew I wanted to make them again this week.  So while googling for the recipe... I was shocked at some blog posts I came across. While typing "Kelly Hampton pork carnitas..." the following search phrases came up "Kelle Hampton hate..." and "Kelly Hampton annoying...". I love Kelle Hampton.  I have ordered her book, I follow her on Instagram, and I read her blog daily.  She does not annoy me.  I do not hate her.  There are lots of blogs I read that annoy me... ones that are clearly for nothing but self promotion, ones with crazy insane outfit of the day photos, ones with numerous photos of babies buckled totally wrong in their car seats, ones where moms almost boast about finding their babies soaked with sweat in cribs after letting them "cry it out" way too long, etc... Guess what? I stop reading them... because I am annoyed... I don't devote an entire post to it... just a bullet in my random post. Anyways, I think Kelle Hampton is amazing.... if you think otherwise, then don't read her blog.

{4} We need a new home computer.  I have a laptop, but I use it for work.  Madison needs something to do school work on.  Costco has the one we want at the best price.  So on Saturday... we are driving to Massachusetts... because apparently Rhode Island doesn't have Costco... to get a new computer... and some other stuff... like a Costco pretzel and a smoothie.  Oh... and we will also have to buy a membership when we are there. I am totally without a doubt looking forward to this trip on Saturday.

Sorry About the Mess, But We Live Here

I saw my friend, Erin pinned this the other day.  I saw a similar quote once on a blog and a lady went off on how messy houses were disgusting and people needed to clean their homes.  I do not think that is what those quotes mean.  It doesn't mean BE A HOARDER.  It means... if you are in the middle of folding a pile of laundry on the couch and your baby is crying... you are going to go pick your baby up and leave the laundry.  Or if you have dishes to do in the sink and your friend calls and wants to meet you for coffee, you are going to leave the dishes and go.  Because we all need time with our family and friends much more than a spotless house.

Friday Randoms.. Well Randoms From the Week

Wednesday night I made chicken parmigana for dinner and redeemed myself after my chicken cordon blue fiasco last night. 

I took Madison and a friend to the movies Wednesday to see The Vow.  I loved it.  I teared up a few times, but fully expected The Notebook like sobs... but that didn't happen.  There was also a great preview for a movie insprired by a Nicholas Sparks book starring Zac Efron that I know I will want to see.

I keep getting more hours at work.  Someone just quit, so I am going up to 40 hours for a few weeks until we get new people hired and trained.  Gosh... I hope that happens fast and they are good and stay for awhile.  I think 32 hours suits me best.

Thursday evening we went to BJ's (wholesale club) and stocked up! I wasn't too happy with the total purchase price, but I think we have enough paper towels, toilet paper, chicken, eggs, K-cups for the Keurig,  milk, etc... to last us for awhile.

Homemade Soft Pretzels Recipe

My daughter is taking a cooking class at school.  A few weeks ago they made soft pretzels.  She brought the recipe home and has been asking to make them.  I bought all of the ingredients, only to read the recipe's directions on Sunday afternoon and then realizing this dough had to rise overnight.  We were ready to bake and eat pretzels, so I scoured Pinterest and came across this recipe from Shutterbeam and combined the two to make the most fabulous tasting soft pretzels...ever.  We made some with salt and some with cinnamon sugar.




This recipe makes about 8 soft pretzels.

Ingredients -

1 1/2 cups warm (110 to 115 degrees F) water


1 tablespoon sugar


1 1/3 teaspoons table salt

1 package active dry yeast (1/4 oz.)


4 1/2 cups all purpose flour


2 tablespoons unsalted butter, melted


Pam cooking spray for the pan

10 cups water


2/3 cup baking soda


1 large egg yolk beaten with 1 tablespoon water


Pretzel Toppings:


cinnamon sugar (1/8 cup sugar + 3 teaspoons cinnamon)


Kosher salt

unsalted butter (about 1/4 of a stick; melted)

Directions -

Combine the warm water, sugar and kosher salt in a measuring cup and sprinkle the yeast on top.

Allow mixture to sit for 5 minutes or until the mixture begins to foam.

Add the yeast mixture and melted butter into the flour mixture in the bowl of an electric mixer.

Using the dough hook attachment, mix on low speed until well combined.

Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes.

Remove the dough from the bowl, clean the bowl and then spray it lightly with cooking spray.

Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size. (I don't think mine quite doubled... because we keep our house pretty cool, but this did not affect the outcome).


Preheat the oven to 450 degrees F.

Line 2 half-sheet pans with parchment paper (you MUST use parchment paper) and spray the paper with cooking spray and set aside.

Bring the 10 cups of water and the baking soda to a rolling boil in a large pot.

In the meantime, spray your work service with a small amount of cooking spray and then turn the dough out onto work surface and divide into 8 equal pieces.

Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel.

Place onto the parchment-lined half sheet pan.


Place the pretzels into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula or tongs (that is what I used)

Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture

Bake until dark golden brown in color, approximately 12 to 14 minutes.

Transfer to a cooling rack.  Then once cool enough to handle brush your pretzels with the melted butter and then either sprinkle the salt or cinnamon sugar mixture on top.

Serve.

Miscellany Monday

{1} No Baby Furniture For Us

On Saturday we drove to Cape Cod for the day.  After having lunch we stumbled upon an unfinished furniture store, where we proceeded to buy a pricey dining room table and four chairs.  We also picked out a custom stain/paint for them.  It will be ready in about a month.  On the way home... I started to cry.  Dammit... we should have been out today buying baby furniture not a dining room table.  I want a crib... not a dining room table.

{2} Working on a Holiday

Today is a holiday. Chris is off of work.  Madison is work at school.  I have a 9 hour work day ahead of me.  I MUST start remembering to ask off of work on holidays.

{3} Kelle Hampton's Book

I love Kelle Hampton's blog. She wrote a book.  I pre-ordered it last week... along with 25 pregnancy tests and a kit to frost cupcakes because mine is broken and has missing parts from Amazon.  It was probably my weirdest order from them ever. 

{4} Soft Pretzels


Per Madison's request we made homeamde soft pretzels yesterday afternon.  They were so good.  We made some with salt and butter and some with cinnamon sugar.  She made them in her cooking class at school a few weeks ago and has been asking to make them at home.  They weren't ready until after 6 PM so they basically became dinner.  I will be sharing the recipe tomorrow.

{5} I Won Something

Frames + Scrapbook Paper = DIY Wall Art


How I Did It-

I have only been able to find once piece of art for our living room that both my husband and I liked and that went with our living room (it is the numbers canvas in the above photo). So, I decided to make my own wall art.
I have been on the hunt for months for scrapbook paper that matched the fabrics in our living room.  It wasn't until last week when I finally settled on two pieces I loved.  I wanted the square look, but really this project can be done with any mat opening 12x12 or smaller. 

I simply purchased the materials and then framed the scrapbook paper as I would a photo.

I love how these turned out.

Purchasing the Supplies -

My frames are 20x20 with 11.5x11.5 openings and are from Ikea for $19.99.  Mine are black but they are also available in white or natural wood.  They can also be purchased online from Ikea here.

This paper I used was purchased at either Michaels or AC Moore (I do not remember) and can be found online here for less than 50 cents per 12x12 sheet.



The other paper was purchased at AC Moore within the last week or so.  I couldn't find it online. 

Total Cost = $41.48

2 sheets of scrapbook paper $1.50
2 square Ikea frames $39.98

What I Love About It -

  • It matches the other colors in our room.
  • It looks fabulous hanging on our green wall.
  • I can always change out the paper if I change the colors in my living room.
